Ingredients

  • 4 medium Zucchini
  • 2 tablespoons Olive oil
  • 1 cup Heavy cream
  • 4 ounces Cream cheese
  • 1 cup Parmesan cheese, grated
  • 3 cloves Garlic, minced
  • 2 tablespoons Butter
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.125 teaspoon Nutmeg
  • 1 tablespoon Fresh parsley, chopped

Directions

Step 1

Trim the zucchini ends and use a spiralizer to create zucchini noodles. If you don't have a spiralizer, you can use a julienne peeler to create thin strips.

Step 2

Heat 1 tablespoon of olive oil in a large frying pan over medium heat. Add the zucchini noodles and cook for 3-4 minutes until just tender. Remove from heat and set aside in a large bowl.

Step 3

In the same frying pan, add the remaining tablespoon of olive oil and butter over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
