Ingredients

  • 1 large head cauliflower
  • 2 cups spinach
  • 4 ounces cream cheese
  • 1/4 cup heavy cream
  • 3 cloves garlic
  • 2 tablespoons butter
  • 1/2 cup parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Directions

Step 1

Wash the cauliflower and cut it into florets.

Step 2

Fill a large pot with water and bring it to a boil over medium-high heat.

Step 3

Add the cauliflower florets to the boiling water and cook for 12-15 minutes, or until the cauliflower is very tender.

Step 4

While the cauliflower is cooking, wash the spinach and drain excess water.

In a small pan over medium heat, melt 1 tablespoon of butter and add minced garlic. Sauté for 1-2 minutes until fragrant, then add the spinach. Cook for about 2 minutes until just wilted. Remove from heat and set aside.
