  • 1 cup Full-fat Greek yogurt

  • 2 tablespoons Powdered erythritol sweetener
  • 2 tablespoons Chia seeds
  • 0.25 cup Unsweetened shredded coconut
  • 0.25 cup Almonds (sliced)
  • 1 teaspoon Lime zest
  • 4 leaves Fresh mint leaves (for garnish)

Directions

Step 1

Peel the ripe mango, remove the seed, and cut the flesh into small cubes. Set aside about 1/4 of the cubes for garnishing.

Step 2

In a medium bowl, combine the Greek yogurt, coconut cream, vanilla extract, and powdered erythritol. Mix well until smooth and creamy.

Stir in the chia seeds and let the mixture sit for 5 minutes to allow the chia seeds to slightly absorb and thicken the mixture.
