Ingredients

  • 3 tablespoons Butter
  • 1 medium Onion, chopped
  • 2 whole Garlic cloves, minced
  • 4 cups Cauliflower, chopped
  • 4 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Nutritional yeast
  • 1 whole Bay leaf
  • 2 sprigs Fresh thyme
  • 1 cup Frozen corn, keto-friendly

Directions

Step 1

In a large pot, melt the butter over medium heat.

Step 2

Add the chopped onion and minced garlic and sauté until the onion becomes translucent, about 5 minutes.

Step 3

Add the chopped cauliflower to the pot and stir well with the onion and garlic mixture.

Step 4

Pour the chicken or vegetable broth into the pot and add the bay leaf and thyme sprigs. Bring the mixture to a boil.

Once boiling, reduce the heat to a simmer and cover the pot. Cook until the cauliflower is tender, about 15 minutes.

Remove the bay leaf and thyme sprigs from the pot.
