  • 2 pounds Chicken thighs
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 2 stalks Celery, chopped
  • 1 small Carrot, chopped
  • 6 cups Chicken broth
  • 1 cup Heavy cream
  • 4 ounces Cream cheese, softened and cubed
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Fresh rosemary, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Baby spinach

Directions

Step 1

Heat olive oil in a large pot over medium-high heat. Add the chicken thighs and sear on both sides until browned, about 5 minutes per side.

Step 2

Remove the chicken from the pot and set aside. In the same pot, add the butter and let it melt.

Add the chopped onion, garlic, celery, and carrot to the pot. Sauté for 5-6 minutes until the vegetables are softened and fragrant.
