  • 1 cup Heavy Cream
  • 1.5 teaspoons Banana Extract
  • 0.5 cup Erythritol Sweetener
  • 3 units Egg Yolks
  • 1 teaspoon Vanilla Extract
  • 0.25 teaspoon Salt

Directions

Step 1

In a medium saucepan over medium heat, combine the almond milk and heavy cream. Heat the mixture, stirring occasionally, until it begins to simmer. Do not let it boil.

Step 2

In a separate bowl, whisk together the egg yolks, erythritol sweetener, and salt until well combined and slightly frothy.

Step 3

Slowly pour about half of the hot cream mixture into the egg yolks, whisking constantly to temper the eggs and prevent them from cooking.

Step 4

Return the egg yolk mixture to the saucepan with the remaining cream mixture, stirring constantly over low heat, until the mixture thickens and coats the back of a spoon, about 5 to 7 minutes.

Remove the saucepan from heat and stir in the banana extract and vanilla extract. Mix until everything is incorporated.
