  • 1 pound chicken thighs, boneless and skinless
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 2 celery stalks, chopped
  • 1 medium zucchini, diced
  • 8 ounces mushrooms, sliced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 4 ounces cream cheese, softened
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and season them with salt and pepper.

Step 2

In a large pot or Dutch oven, heat olive oil and 1 tablespoon of butter over medium-high heat.

Step 3

Add the chicken pieces and cook until they are golden brown on all sides, about 5-7 minutes. Remove the chicken from the pot and set aside.

In the same pot, add the remaining 2 tablespoons of butter and lower the heat to medium.
