  • 2 cups Almond flour
  • 1/4 cup Coconut flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Xanthan gum
  • 2 tablespoons Erythritol
  • 1/2 cup Unsalted butter
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 1/4 cup Heavy cream
  • 3 ounces Unsweetened dark chocolate
  • 1/4 cup Chopped nuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the almond flour, coconut flour, baking powder, xanthan gum, and erythritol, then mix thoroughly.

Step 3

Cut the unsalted butter into small cubes and add to the dry ingredients, mixing with a fork or pastry cutter until it resembles a crumbly mixture.

Step 4

In a separate bowl, whisk together the eggs and vanilla extract. Add the wet ingredients to the dry ingredients and mix to form a dough.
