Ingredients

  • 1 cup Almond flour
  • 2 tablespoons Coconut flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 3 large Eggs
  • 0.25 cup Heavy cream
  • 1 cup Cheddar cheese, shredded
  • 0.25 cup Green onions, finely chopped
  • 1 medium Jalapeño, seeded and finely chopped
  • 1 cup Canned baby corn, drained and chopped
  • 3 tablespoons Olive oil

Directions

Step 1

In a large mixing bowl, combine the almond flour, coconut flour, baking powder, and salt.

In another bowl, whisk together the eggs and heavy cream until well combined.

Step 3

Add the egg mixture to the dry ingredients and stir until a smooth batter forms.

Step 4

Stir in the shredded cheddar cheese, chopped green onions, jalapeño, and chopped baby corn.

Step 5

Heat the olive oil in a large non-stick skillet over medium heat.

Scoop about 2 tablespoons of batter and place it into the skillet, flattening slightly to form a fritter. Repeat to fill the skillet without overcrowding.
