  • 1 teaspoon black pepper

  • 6 slices bacon
  • 250 grams button mushrooms
  • 1 large onion
  • 4 garlic cloves
  • 2 cups dry red wine
  • 1 cup low-sodium chicken broth
  • 2 tablespoons tomato paste
  • 1 teaspoon fresh thyme
  • 1 bay leaf
  • 2 tablespoons butter
  • 1 teaspoon xanthan gum

Directions

Step 1

Season the chicken thighs with 1 teaspoon of salt and the black pepper.

In a large Dutch oven or heavy skillet, heat the olive oil over medium-high heat.

Add the chicken thighs, skin side down, and sear until browned on both sides, about 5 minutes per side. Remove to a plate.

In the same pot, add the bacon slices and cook until crispy. Remove and set aside, leaving the bacon fat in the pot.
