Ingredients

  • 180 grams Almond flour
  • 30 grams Coconut flour
  • 50 grams Erythritol sweetener
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 80 grams Unsalted butter
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 teaspoons Instant coffee powder
  • 2 tablespoons Hot water
  • 60 ml Heavy cream
  • 60 grams Cream cheese

Directions

Step 1

Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.

Step 2

In a small bowl, mix the instant coffee powder with hot water until dissolved, then set aside to cool slightly.

Step 3

In a large mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt. Mix well.

Melt the butter in a small saucepan over low heat or in the microwave, then let it cool for a couple of minutes.
