  • 0.333 cup Erythritol sweetener
  • 1 teaspoon Vanilla extract
  • 0.125 teaspoon Sea salt
  • 3.5 ounces Dark chocolate (85% cocoa, sugar-free)

Directions

Step 1

Line a baking sheet with parchment paper and set aside.

In a medium-sized mixing bowl, combine the unsweetened shredded coconut, melted coconut oil, erythritol sweetener, vanilla extract, and sea salt. Mix well until the ingredients are fully combined and the mixture is homogeneous.

Use your hands to shape the mixture into small balls or flat bars, approximately 1 inch in diameter for balls, or 2x1 inches for bars. Place each candy shape onto the prepared baking sheet.

Place the baking sheet with the coconut candy shapes into the freezer for about 10 minutes to allow them to firm up.
