Ingredients

  • 1 cup almond flour
  • 0.25 cup coconut flour
  • 1 teaspoon xanthan gum
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 3 tablespoons butter
  • 1 egg
  • 2 tablespoons water
  • 1 cup chicken breast, cooked and shredded
  • 0.5 cup onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 0.5 teaspoon cumin powder
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon chili powder
  • 2 tablespoons coconut oil
  • 2 tablespoons coriander leaves, chopped
  • 1 tablespoon lime juice
  • 1 tablespoon sesame seeds (optional)

Directions

Step 1

In a large mixing bowl, combine almond flour, coconut flour, xanthan gum, baking powder, and salt.

Step 2

Add melted butter, egg, and water to the dry ingredients and mix until it forms a dough. Wrap the dough in plastic wrap and refrigerate for 15 minutes.

Step 3

For the filling, heat coconut oil in a pan over medium heat. Add chopped onions and sauté until translucent.

Stir in garlic and ginger, cooking until fragrant.

Add garam masala, coriander powder, cumin, turmeric, and chili powder, stirring for another minute.

Add shredded chicken to the pan. Mix well to coat the chicken with the spices.

Add salt to taste and cook for 5 more minutes. Remove from heat and stir in lime juice and chopped coriander leaves. Let it cool.

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Take the dough out of the fridge and roll it out between two sheets of parchment paper to about 1/8 inch thickness.

Cut the dough into circles using a round cookie cutter or a glass.

Place a heaping teaspoon of filling in the center of each circle. Fold the dough over to create a half-moon shape. Seal the edges by pressing fork tines around the edges.

Step 12

Place the samosas on the prepared baking sheet. If using, lightly brush the tops with a bit of water and sprinkle sesame seeds.

Step 13

Bake for 15-20 minutes, or until the samosas are golden brown.
