Ingredients

  • 1 large zucchini
  • 1 medium carrot
  • 1 cup cauliflower
  • 1 cup almond flour

  • 2 stalks green onions, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Start by grating the zucchini and carrot. Place the grated zucchini in a cheesecloth or a clean kitchen towel and squeeze out as much moisture as possible. Set aside.

Chop the cauliflower into small pieces and pulse in a food processor until it resembles rice. You should have about one cup of cauliflower rice.
