Ingredients

  • 2 tablespoons Olive oil
  • 2 Celery stalks, chopped
  • 1 medium Zucchini, diced
  • 1 medium Green bell pepper, chopped
  • 2 cups Spinach, fresh
  • 3 Garlic cloves, minced
  • 1 small Onion, chopped
  • 6 cups Vegetable broth
  • 2 sprigs Fresh thyme
  • 1 sprig Fresh rosemary
  • 1 Bay leaf
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped celery, diced zucchini, and chopped green bell pepper to the pot. Sauté for 5-7 minutes or until the vegetables start to soften.

Step 3

Add the minced garlic and chopped onion to the pot. Stir well and continue to cook for another 3 minutes until the onion becomes translucent.

Step 4

Pour in the vegetable broth and bring the mixture to a simmer.

Step 5

Add the fresh thyme, rosemary, and bay leaf to the pot. Stir in salt and black pepper.

Step 6

Reduce the heat to low and let the soup simmer for about 20 minutes to allow the flavors to meld together.

Remove and discard the thyme sprigs, rosemary sprig, and bay leaf.

Step 8

Add the fresh spinach to the pot and stir until it wilts into the soup.
