Ingredients

  • 1 cup heavy cream
  • 2 tablespoons unsalted butter
  • 2 tablespoons erythritol
  • 1 teaspoon vanilla extract
  • 3 large egg yolks
  • 0.25 teaspoon Xanthan gum
  • 1 pinch sea salt

Directions

Step 1

In a medium saucepan over medium heat, combine the heavy cream and unsalted butter.

Step 2

Add the erythritol and a pinch of sea salt to the cream and butter mixture. Stir the mixture well until the butter is completely melted and the erythritol is fully dissolved.

Step 3

Lower the heat to medium-low. Whisk the egg yolks in a separate bowl.

Step 4

Slowly drizzle a small amount of the hot cream mixture into the egg yolks while whisking constantly. This will gently heat the yolks to prevent them from scrambling.

Step 5

Once tempered, pour the yolk mixture back into the saucepan, stirring continuously over medium-low heat until the sauce thickens, about 8-10 minutes.

Step 6

Remove from heat and stir in the vanilla extract and xanthan gum. Continue stirring until the xanthan gum is completely incorporated and the sauce is smooth.

Step 7

Allow the sauce to cool slightly before serving. The sauce will thicken more as it cools.
