Ingredients

  • 2 cups Heavy cream
  • 1 cup Unsweetened almond milk
  • 5 large Egg yolks
  • 0.5 cup Granulated erythritol
  • 2 teaspoons Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

Preheat your oven to 325°F (163°C). Prepare a baking dish large enough to hold 6 ramekins and add about 1 inch of water to it to create a water bath.

Step 2

In a medium saucepan, combine the heavy cream and unsweetened almond milk. Heat the mixture over medium heat until it begins to simmer, then remove from heat.

Step 3

In a medium bowl, whisk the egg yolks and granulated erythritol until the mixture is pale and slightly thickened. Slowly whisk in the hot cream mixture until well combined.

Step 4

Add the vanilla extract and salt to the custard mixture, stirring gently to combine.

Step 5

Pour the custard mixture through a fine-mesh sieve into a large measuring cup or bowl with a spout to remove any cooked egg particles.

Step 6

Divide the strained custard mixture evenly among the 6 ramekins.

Step 7

Place the filled ramekins into the prepared baking dish. Carefully transfer the dish to the oven and bake for 30-40 minutes, or until the custard is just set in the center and jiggles slightly when shaken.

Step 8

Remove the ramekins from the water bath and allow them to cool at room temperature for about 30 minutes. Then cover each ramekin with plastic wrap and refrigerate for at least 2 hours, or until fully chilled.

Step 9

Serve the custard cold, garnished with a sprinkle of cinnamon or nutmeg if desired.
