Ingredients

  • 2 cups almond flour
  • 0.25 cups coconut flour
  • 0.75 cups granulated erythritol
  • 2 teaspoons baking powder
  • 0.25 teaspoons salt
  • 0.5 cups unsalted butter
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • 0.5 cups unsweetened almond milk
  • 1 cup heavy whipping cream
  • 0.25 cups powdered erythritol
  • 1 teaspoon vanilla extract (for whipped cream)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper.

Step 2

In a large bowl, whisk together the almond flour, coconut flour, granulated erythritol, baking powder, and salt until well combined.

Step 3

In another bowl, beat the unsalted butter until creamy. Add the vanilla extract and continue to beat until smooth. Add the eggs, one at a time, beating well after each addition.

Step 4

Gradually add the dry ingredients to the wet ingredients, alternating with the almond milk. Begin and end with the dry ingredients, mixing gently until just combined.

Step 5

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 6

Bake for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean.

Step 7

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 8

For the whipped cream, beat the heavy whipping cream with the powdered erythritol and a teaspoon of vanilla extract until soft peaks form.

Step 9

Spread the whipped cream evenly over the cooled cake or serve on the side as desired.

Step 10

Slice and serve your delicious keto vanilla cake with whipped cream, and enjoy!
