Ingredients

  • 1.5 cups Almond flour
  • 0.5 cup Parmesan cheese, grated
  • 1 large Egg
  • 4 tablespoons Olive oil
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 2 cups Tomatoes, diced
  • 0.25 cup Fresh basil, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Balsamic vinegar
  • 0 to taste Salt and pepper
  • 0.5 cup Mozzarella cheese, shredded

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a mixing bowl, combine almond flour, grated Parmesan cheese, baking powder, and salt.

Add in one egg and 2 tablespoons of olive oil, mixing until a dough forms.

Roll out the dough on the prepared baking sheet to about 1/4-inch thickness.
