Ingredients

  • 200 grams Cottage Cheese
  • 1 large Egg
  • 60 grams Almond Flour
  • 2 tablespoons Erythritol Sweetener
  • 1 teaspoon Vanilla Extract
  • 0.5 teaspoon Baking Powder
  • 0.25 teaspoon Salt
  • 2 tablespoons Unsalted Butter

Directions

Step 1

In a mixing bowl, add the cottage cheese and mash it with a fork or potato masher until smooth.

Step 2

Add the egg to the mashed cottage cheese and mix until well combined.

Step 3

Stir in the almond flour, erythritol sweetener, vanilla extract, baking powder, and salt. Mix until a thick batter forms.

Step 4

Divide the batter into 8 equal portions and shape each portion into a small patty, about 1 cm thick.

Step 5

Heat a non-stick skillet over medium heat and add 1 tablespoon of butter. Once melted and hot, gently place the syrniki patties in the skillet.

Step 6

Cook for about 3–4 minutes on each side until golden brown and cooked through. Adjust the heat as necessary to prevent burning.

Step 7

Remove the cooked syrniki from the skillet and repeat with the remaining butter and batter until all patties are cooked.

Step 8

Serve warm with your choice of low-carb toppings such as sour cream, fresh berries, or sugar-free syrup.
