Ingredients

  • 1 head Cauliflower
  • 1 tablespoon Rice Vinegar
  • 1 teaspoon Mirin
  • 5 sheets Sushi Nori Sheets
  • 1 medium Cucumber
  • 1 large Avocado
  • 200 grams Fresh Salmon or Tuna
  • 2 tablespoons Soy Sauce
  • 1 teaspoon Wasabi Paste
  • 2 tablespoons Pickled Ginger

Directions

Step 1

Begin by preparing the cauliflower rice. Remove the leaves and the tough core from the cauliflower head. Break it into smaller florets.

Step 2

In a food processor, pulse the cauliflower florets until they resemble rice grains. Be careful not to over-process and make it mushy.

Step 3

Heat a large non-stick pan over medium heat. Add the riced cauliflower and cook for 5-7 minutes, stirring occasionally, until it's tender but not mushy.

Step 4

Remove the cauliflower rice from heat and let it cool slightly. Stir in the rice vinegar and mirin to season the rice, and mix well.

Prepare the filling ingredients. Julienne the cucumber into thin matchstick-sized pieces. Slice the avocado in half, remove the pit, peel, and slice thinly.
