Ingredients

  • 3 pounds beef roast
  • 3 tablespoons olive oil
  • 4 units garlic cloves, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 cups broccoli florets
  • 2 cups cauliflower florets
  • 1 cup Brussels sprouts, halved
  • 2 cups beef broth
  • 1 teaspoon xanthan gum
  • 2 tablespoons butter

Directions

Step 1

Preheat the oven to 325°F (165°C).

Step 2

In a small bowl, mix olive oil, minced garlic, rosemary, salt, and pepper to create a marinade.

Step 3

Rub the marinade evenly over the beef roast.

Step 4

Place the beef roast on a roasting rack in a roasting pan.

Step 5

Roast the beef in the preheated oven for about 2.5 to 3 hours, or until a meat thermometer reaches 135°F (57°C) for medium-rare, adjusting time for desired doneness.

Step 6

During the last hour of roasting, toss the broccoli, cauliflower, and Brussels sprouts with a tablespoon of olive oil, salt, and pepper.

Step 7

Spread the vegetables on a baking sheet and place in the oven beneath the roast for about 30-45 minutes or until tender and slightly charred.

Step 8

Once the beef roast is done, remove it from the oven and let it rest for 15 minutes before slicing.

Step 9

While the beef is resting, prepare the keto gravy.

Step 10

In a saucepan over medium heat, melt the butter and add the beef broth.

Step 11

Sprinkle the xanthan gum gradually, whisking continuously to avoid lumps, and let the gravy simmer until thickened, about 5-7 minutes.

Step 12

To serve, slice the rested beef roast and serve with roasted vegetables and a generous pour of the keto gravy.
