Ingredients

  • 4 whole Red bell peppers
  • 1 pound Ground beef
  • 1 cup Cauliflower rice
  • 2 tablespoons Olive oil
  • 1 medium, diced Onion
  • 3 minced Garlic cloves
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup, grated Parmesan cheese
  • 1 cup, shredded Mozzarella cheese
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off the bell peppers and remove the seeds and membranes.

Step 3

Place the peppers in a baking dish, cut side up. Drizzle with a tablespoon of olive oil and roast in the preheated oven for 15 minutes.

Step 4

Meanwhile, heat the remaining olive oil over medium heat in a large skillet.

Step 5

Add the diced onion and cook until translucent, about 5 minutes.

Step 6

Stir in the minced garlic and cook for another minute until fragrant.

Step 7

Add the ground beef into the skillet, breaking it up with a spoon. Cook until fully browned.

Stir in the cauliflower rice, tomato paste, oregano, basil, salt, and black pepper.

Cook the mixture for 5-7 minutes, or until the cauliflower rice becomes tender.

Remove the skillet from heat and stir in the grated Parmesan cheese and half of the shredded mozzarella.

Fill each roasted bell pepper with the beef and cauliflower rice mixture.

Top the stuffed peppers with the remaining mozzarella cheese.

Return the dish to the oven and bake for another 15-20 minutes until the cheese is melted and bubbly.

Remove from the oven, sprinkle with fresh parsley, and serve warm.
