Ingredients

  • 6 pieces Bone-in chicken thighs
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 Small onion, finely chopped
  • 4 cloves Garlic cloves, minced
  • 2 cups Chicken broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 leaves Bay leaves
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Lemon juice

Directions

Step 1

In a large heavy-bottomed pot or Dutch oven, heat olive oil and butter over medium-high heat.

Season the chicken thighs with salt and black pepper on both sides.

Brown the chicken thighs in the hot oil and butter, about 4-5 minutes per side, until golden. Remove and set aside.
