Ingredients

  • 4 medium Zucchini
  • 1 pound Ground beef
  • 2 tablespoons Olive oil
  • 1 medium Onion
  • 3 Garlic cloves
  • 1 14.5 oz can Diced tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Italian seasoning
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Parmesan cheese
  • 2 tablespoons Fresh basil

Directions

Step 1

Use a spiralizer to create zucchini noodles from the zucchinis. Set aside the zoodles.

Step 2

In a large skillet over medium heat, add olive oil. Once hot, add chopped onion and minced garlic, sautéing for 3-4 minutes until the onion becomes translucent.

Step 3

Add the ground beef to the skillet, breaking it apart with a spoon. Cook until the beef is browned and cooked through, about 5-7 minutes.

Step 4

Stir in the diced tomatoes, tomato paste, Italian seasoning, salt, and black pepper. Lower the heat and let the sauce simmer for 10-15 minutes, stirring occasionally.
