  • 1 teaspoon Rosemary
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Butter
  • 0.25 cup Heavy cream
  • 1 cup Cheddar cheese, shredded

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Cut the cauliflower into florets and steam them for about 10 minutes or until tender.

Step 3

While the cauliflower is steaming, heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 4

Add the diced onion, carrots, and celery to the skillet and sauté until the vegetables start to soften, about 5 minutes.

Step 5

Add the minced garlic and cook for another minute.

Step 6

Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula, about 8 minutes.

Stir in the tomato paste, beef broth, Worcestershire sauce, thyme, rosemary, salt, and pepper. Allow the mixture to simmer for 10 minutes until slightly thickened.

Step 8

Drain the cooked cauliflower and place it in a food processor with butter, heavy cream, and a pinch of salt and pepper. Blend until smooth and creamy.

Step 9

Spread the meat mixture evenly in a baking dish, and top with the cauliflower mash.

Step 10

Sprinkle the shredded cheddar cheese evenly over the top of the mash.

Step 11

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Step 12
