Ingredients

  • 4 large eggs
  • 2 tablespoons heavy cream
  • 1 tablespoon unsalted butter
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper
  • 1 tablespoon chopped chives (optional)

Directions

Step 1

Crack the eggs into a mixing bowl and add the heavy cream, salt, and black pepper.

Step 2

Using a whisk or fork, beat the eggs until the yolks and whites are fully combined and the mixture is slightly frothy.

Step 3

Heat a non-stick skillet over medium-low heat and add the unsalted butter.

Step 4

Once the butter is melted and just starting to foam, pour in the egg mixture.

Step 5

Allow the eggs to sit undisturbed for a few seconds, then gently stir the eggs with a spatula, pulling them from the edges toward the center.

Step 6

Continue to cook, gently stirring and folding the eggs, until they are softly set and slightly runny in places. Remember, the eggs will continue to cook slightly after being removed from the heat.

Step 7

Remove the skillet from the heat and let the eggs sit for another 30 seconds to finish cooking.

Step 8

Transfer the scrambled eggs to plates and, optionally, sprinkle with chopped chives before serving.
