Ingredients

  • 2 pounds beef roast (such as ribeye or sirloin)
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • 1 whole small cauliflower head
  • 4 tablespoons butter
  • 2 tablespoons heavy cream
  • 2 cups broccoli florets
  • 1 tablespoon olive oil (for vegetables)
  • 0.5 teaspoon salt (for vegetables)
  • 0.5 teaspoon pepper (for vegetables)

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

In a small bowl, mix 2 teaspoons salt, 1 teaspoon black pepper, 1 teaspoon garlic powder, and 1 teaspoon dried rosemary together.

Step 3

Rub the beef roast with 2 tablespoons of olive oil and then coat it evenly with the spice mixture.

Step 4

Place the beef in a roasting pan and roast in the oven for around 60-75 minutes, or until the internal temperature reaches your preferred doneness (medium rare is 135°F).

Step 5

While the beef is roasting, cut the cauliflower into florets and boil in a large pot of water until very tender, about 10-15 minutes.

Step 6

Drain the cauliflower and transfer to a food processor along with 4 tablespoons of butter and 2 tablespoons of heavy cream. Blend until smooth and creamy. Set aside warm.

Step 7

Place the broccoli florets in a bowl and toss with 1 tablespoon of olive oil, 0.5 teaspoon salt, and 0.5 teaspoon pepper.

Step 8

Spread the broccoli on a baking sheet and place in the oven 20 minutes before the beef is finished.

Step 9

Roast the broccoli until tender and slightly crispy on the edges.

Step 10

Once the beef is cooked, remove it from the oven and let it rest for 15 minutes before slicing.

Step 11

Serve the slices of beef with the cauliflower mash and roasted broccoli on the side.
