Ingredients

  • 4 medium Turnips
  • 1 large Egg
  • 0.5 cup Almond flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 2 tablespoons Green onions, chopped
  • 0.25 cup Avocado oil
  • 1 cup Sour cream (optional, for serving)

Directions

Step 1

Peel and coarsely grate the turnips using a food processor or a box grater.

Step 2

Place the grated turnips in a large bowl and sprinkle with salt. Let sit for about 5 minutes to draw out excess moisture.

Step 3

Transfer the grated turnips into a clean kitchen towel and squeeze out as much moisture as possible.

Step 4

Return the drained turnips to the bowl. Add the egg, almond flour, ground black pepper, garlic powder, onion powder, and chopped green onions. Mix well until all ingredients are thoroughly combined.

Step 5

In a large skillet, heat the avocado oil over medium heat until shimmering.

Step 6

Using a tablespoon, scoop about 2 tablespoons of the turnip mixture into your hand and form a patty. Carefully place the patty into the hot oil. Repeat this process with the remaining mixture, making sure not to crowd the pan.

Step 7

Fry each latke for about 3-4 minutes on each side, or until golden brown and crispy.

Step 8

Remove the latkes from the pan and place them on a paper towel-lined plate to drain excess oil.

Step 9

Serve warm with a dollop of sour cream if desired.
