Ingredients

  • 500 grams Cauliflower florets
  • 60 grams Almond flour
  • 50 grams Grated Parmesan cheese
  • 1 large Egg
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 2 tablespoons Olive oil

Directions

Step 1

Begin by steaming or boiling the cauliflower florets for about 10 minutes, or until they are tender. Drain and allow them to cool for a few minutes.

Step 2

Transfer the cooked cauliflower into a food processor and pulse until it reaches a smooth, mashed consistency.

Step 3

In a large mixing bowl, combine the mashed cauliflower, almond flour, grated Parmesan cheese, egg, garlic powder, onion powder, salt, black pepper, and chopped parsley. Stir until all ingredients are well incorporated.

Step 4

Shape the mixture into small, cylindrical croquettes, approximately 2 inches long each.

Step 5

Heat the olive oil in a large nonstick skillet over medium heat.

Step 6

Once the oil is hot, carefully place the croquettes in the skillet, making sure not to overcrowd them. You might need to cook them in batches.

Step 7

Cook each side of the croquettes for about 3-4 minutes, or until they are golden brown and crispy.

Step 8

Remove the cooked croquettes from the skillet and place them on a plate lined with paper towels to absorb any excess oil.

Step 9

Serve the keto potato croquettes warm, garnished with more fresh parsley if desired.
