Ingredients

  • 500 grams Pork tenderloin
  • 4 pieces Keto baguette
  • 60 ml Coconut aminos
  • 30 ml Fish sauce
  • 30 ml Lime juice
  • 4 cloves Garlic, minced
  • 2 tablespoons Ginger, minced
  • 2 tablespoons Erythritol
  • 2 tablespoons Avocado oil
  • 1 medium Carrot, shredded
  • 4 small Radish, thinly sliced
  • 0.5 medium Cucumber, thinly sliced
  • 1 bunch Fresh cilantro
  • 1 large Jalapeño, optional, sliced
  • 120 grams Mayonnaise

Directions

Step 1

Slice the pork tenderloin into thin strips, about 1/4 inch thick.

Step 2

In a mixing bowl, combine coconut aminos, fish sauce, lime juice, minced garlic, minced ginger, erythritol, and avocado oil. Add the pork slices and marinate for at least 15 minutes.

Step 3

While the pork is marinating, prepare the vegetables: shred the carrot, slice the radish, and slice the cucumber. Set aside.

Step 4

Heat a non-stick skillet over medium-high heat. Once hot, add the marinated pork strips, discarding the marinade. Cook the pork for about 5-7 minutes, until cooked through and slightly caramelized. Remove from heat.
