Ingredients

  • 1 medium head Cauliflower
  • 2 tablespoons Rice vinegar
  • 1 teaspoon Sugar-free sweetener
  • 0.5 teaspoon Salt
  • 200 grams Topping fish (e.g., sushi-grade salmon, tuna)
  • 1 teaspoon Wasabi paste
  • 2 tablespoons Soy sauce
  • 50 grams Pickled ginger
  • 1 sheet Nori sheets
  • 1 medium Avocado

Directions

Step 1

Cut the cauliflower into florets and pulse in a food processor until it reaches a rice-like consistency.

Step 2

In a large skillet, lightly toast the cauliflower rice over medium heat for 4-5 minutes until just tender. Remove from heat.

Step 3

In a small bowl, combine rice vinegar, sugar-free sweetener, and salt. Stir until the sweetener dissolves.

Step 4

Add the vinegar mixture to the cooked cauliflower rice and mix well. Let it cool to room temperature.

Step 5

Slice the fish into thin, rectangular pieces, approximately 5 cm (2 inches) in length.

Step 6

Peel and slice the avocado into thin strips.

Step 7

Cut the nori sheet into small strips to wrap around the nigiri if desired.

Step 8

With damp hands, take a tablespoon of cauliflower rice and mold it into a small rectangular shape.

Step 9

Place a small dab of wasabi paste on one side of the fish slice and lay the fish over the formed cauliflower rice, wasabi side down.

Step 10

If using nori, wrap one strip around the middle of each piece of nigiri to secure it.

Step 11

Repeat the assembly process with remaining ingredients.

Step 12

Serve the keto nigiri sushi with additional wasabi, soy sauce, and pickled ginger alongside.
