Ingredients

  • 2 cups, chopped, fresh or canned Clams
  • 2 cups Clam juice
  • 3 cups, chopped into small florets Cauliflower
  • 1 cup Heavy cream
  • 2 cups Chicken broth
  • 6 slices Thick-cut bacon
  • 2 stalks, diced Celery
  • 1 medium, diced Onion
  • 3 cloves, minced Garlic
  • 2 tablespoons Butter
  • 1 Bay leaf
  • 1 teaspoon, dried Thyme
  • 1 teaspoon, or to taste Salt
  • 0.5 teaspoon, or to taste Black pepper
  • 2 tablespoons, chopped fresh (optional for garnish) Parsley

Directions

Step 1

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.

Step 2

Add the butter to the pot. Once melted, add the diced onion, garlic, and celery to the pot. Sauté until the onion becomes translucent, about 5 minutes.

Step 3

Add the cauliflower florets to the pot and stir to coat in the onion mixture.

Step 4

Pour in the chicken broth, clam juice, and add the bay leaf and dried thyme. Bring the mixture to a boil, then reduce the heat to a simmer.

Step 5

Allow the mixture to simmer until the cauliflower is tender, about 15-20 minutes.

Step 6

Remove and discard the bay leaf. Using an immersion blender, blend the soup partially, leaving it a bit chunky, or blend completely smooth based on your preference.

Step 7

Stir in the heavy cream and chopped clams. Cook for another 5-10 minutes until heated through. If using canned clams, do not overcook to avoid them becoming rubbery.

Step 8

Season with salt and black pepper to taste.

Step 9

Ladle the soup into bowls and top with the crispy bacon pieces. Garnish with fresh parsley if desired before serving.
