  • 0.5 cup Dry white wine
  • 3 cups Seafood or chicken broth
  • 1 cup Heavy cream
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 1 tablespoon, chopped Fresh parsley
  • 0.5 teaspoon Xanthan gum

Directions

Step 1

Start by steaming the lobster tails until they turn bright red and are fully cooked, about 8-10 minutes. Once cooled, remove the meat from the shells, dice it, and set aside. Keep the lobster shells.

Step 2

In a large pot, melt the butter over medium heat. Sauté the celery, carrot, shallot, and garlic for about 5 minutes, until softened.

Add the lobster shells to the pot. Stir in the tomato paste and cayenne pepper, cooking for an additional 2 minutes to toast the tomato paste.
