Ingredients

  • 2 cups Almond flour
  • 2 tablespoons Coconut flour
  • 1 cup Erythritol
  • 1.5 teaspoons Baking powder
  • 0.25 teaspoon Salt
  • 4 large Eggs
  • 0.5 cup Unsweetened almond milk
  • 0.5 cup Butter, melted
  • 1 teaspoon Vanilla extract
  • 0.5 cup Sugar-free jam
  • 2 cups Coconut oil, for frying

Directions

Step 1

In a large mixing bowl, combine almond flour, coconut flour, erythritol, baking powder, and salt. Stir well until the dry ingredients are thoroughly mixed.

Step 2

In another bowl, whisk together the eggs, almond milk, melted butter, and vanilla extract until smooth and well combined.

Step 3

Gradually add the wet ingredients to the dry ingredients, stirring gently until a thick batter forms.

Using your hands, shape the dough into 12 evenly sized balls.

Flatten each ball slightly and using your thumb, create an indentation in the center for the jam filling. Fill each indentation with about half a teaspoon of sugar-free jam, then carefully pinch the sides around the jam to seal and reshape them back into balls.

Heat the coconut oil in a deep frying pan or pot over medium heat until it reaches 350°F (175°C).

Carefully drop in the donuts, a few at a time, ensuring not to overcrowd the pan. Fry each donut for about 2-3 minutes on each side, or until they are golden brown and cooked through.
