Ingredients

  • 1 pound Ground beef (preferably 80/20 lean-to-fat ratio)
  • 0.5 pound Ground pork
  • 0.5 cup Parmesan cheese, grated
  • 0.25 cup Almond flour
  • 1 whole Large egg
  • 3 cloves Garlic, minced
  • 0.25 cup Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Oregano, dried
  • 2 tablespoons Olive oil
  • 1.5 cups Low-carb marinara sauce

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

In a large mixing bowl, combine ground beef, ground pork, Parmesan cheese, almond flour, egg, minced garlic, chopped parsley, salt, black pepper, and oregano.

Step 3

Use your hands or a spoon to mix the ingredients together until everything is evenly combined. Be careful not to overmix as this can make the meatballs tough.

Step 4

Form the mixture into 16-20 meatballs, about 1.5 inches in diameter each, and place them on the prepared baking sheet.

Step 5

Drizzle olive oil over the meatballs to help them brown nicely in the oven.

Step 6

Bake in the preheated oven for 20 minutes, or until the meatballs are browned and cooked through.

Step 7

While the meatballs are baking, heat the low-carb marinara sauce in a large pan over medium heat.

Step 8

Once the meatballs are done, carefully transfer them to the marinara sauce and let them simmer for an additional 5-10 minutes to absorb some sauce flavor.

Step 9

Serve the meatballs hot, garnished with additional parsley if desired, and enjoy!
