Ingredients

  • 2 cups heavy cream
  • 1 cup unsweetened almond milk
  • 4 whole large eggs
  • 0.5 cup erythritol or keto-friendly sweetener
  • 2 teaspoons vanilla extract
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon cinnamon
  • 0.125 teaspoon salt
  • 0.5 cup rum or bourbon (optional)

Directions

Step 1

In a medium saucepan, combine the heavy cream and unsweetened almond milk. Heat over medium heat until the mixture is warm but not boiling, stirring occasionally.

Step 2

While the cream mixture is warming, separate the egg yolks from the whites (reserve the whites for another use if desired). In a medium bowl, whisk together the egg yolks and erythritol until well combined and slightly pale in color.

Step 3

Slowly pour a small amount of the warm cream mixture into the egg yolk mixture, whisking constantly to temper the yolks. Gradually add more of the cream mixture until half of it has been incorporated.

Step 4

Pour the tempered yolk mixture back into the saucepan with the remainder of the cream mixture. Continue to cook over medium heat, stirring constantly with a wooden spoon or silicone spatula, until the mixture thickens slightly and coats the back of the spoon, about 8-10 minutes.

Step 5

Remove the saucepan from the heat and stir in the vanilla extract, ground nutmeg, cinnamon, salt, and, if using, rum or bourbon.

Step 6

Let the egg nog cool to room temperature, then transfer to a pitcher or airtight container and refrigerate for at least 1-2 hours before serving to enhance the flavors.

Serve chilled, with an additional sprinkle of nutmeg or cinnamon if desired.
