Ingredients

  • 4 pounds whole chicken
  • 4 tablespoons olive oil
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh thyme
  • 1 whole lemon
  • 4 whole garlic cloves, minced
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 tablespoons butter
  • 1 whole onion, quartered

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Rinse the chicken inside and out and pat dry with paper towels.

Step 3

Rub the entire chicken with olive oil, coating the skin generously.

Step 4

In a small bowl, mix fresh rosemary, fresh thyme, salt, black pepper, dried oregano, dried basil, and minced garlic.
