Ingredients

  • 2 cups Almond flour
  • 2 tablespoons Coconut flour
  • 2 teaspoons Ground ginger
  • 1 teaspoon Ground cinnamon
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 1 large Egg
  • 0.5 cup Butter, melted
  • 0.5 cup Sugar-free sweetener (such as erythritol)
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Molasses (optional for flavor, use sparingly)

Directions

Step 1

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium-sized bowl, mix together the almond flour, coconut flour, ground ginger, ground cinnamon, baking powder, and salt until well combined.

Step 3

In a separate large bowl, beat the egg. Add the melted butter, sugar-free sweetener, vanilla extract, and optional molasses, mixing until smooth.

Step 4

Gradually incorporate the dry ingredients into the wet ingredients, stirring until a dough forms.

Step 5

Scoop out tablespoon-sized portions of the dough, roll into balls, and place them on the prepared baking sheet. Flatten each ball slightly with the palm of your hand or the bottom of a glass.

Step 6

Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.

Step 7

Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 8

Store the biscuits in an airtight container at room temperature for up to one week.
