Ingredients

  • 1.5 cups Almond flour
  • 0.25 cup Coconut flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Xanthan gum
  • 0.5 cup Erythritol sweetener
  • 0.5 cup Unsweetened almond milk
  • 3 Large eggs
  • 1 teaspoon Vanilla extract
  • 0.25 cup Melted butter
  • 0.25 teaspoon Salt
  • 2 cups Oil for frying (coconut or avocado oil recommended)

Directions

Step 1

In a large mixing bowl, combine almond flour, coconut flour, baking powder, xanthan gum, erythritol sweetener, and salt. Mix well until fully combined.

Step 2

In a separate bowl, whisk together the almond milk, eggs, vanilla extract, and melted butter until smooth.

Step 3

Gradually add the wet ingredients to the dry ingredients, stirring until a dough forms. Knead it gently until smooth and well combined.

Step 4

Lightly flour a clean working surface with additional almond flour. Roll the dough out to about 0.5-inch thickness.

Step 5

Use a doughnut cutter to cut out doughnut shapes. Collect and re-roll the dough scraps and continue cutting until all the dough is used.

Step 6

Heat oil in a deep fryer or a large heavy-bottomed pot to 350°F (175°C). Use a thermometer to maintain the temperature.

Step 7

Carefully drop the doughnuts into the hot oil using a slotted spoon. Fry in batches for about 2-3 minutes on each side or until golden brown.

Step 8

Once cooked, remove the doughnuts from the oil and place them on a plate lined with paper towels to drain the excess oil.

Step 9

Let them cool slightly before serving. Optionally, dust with additional erythritol sweetener for a sweet finish.
