Ingredients

  • 2 cups Almond flour
  • 2 tablespoons Coconut flour
  • 1 tablespoon Baking powder
  • 1 teaspoon Xanthan gum
  • 0.5 teaspoon Salt
  • 3 large Eggs
  • 0.25 cup Olive oil
  • 1 teaspoon Apple cider vinegar
  • 0.5 cup Water
  • 2 tablespoons Fresh rosemary
  • 1 teaspoon Garlic powder
  • 1 teaspoon Flaky sea salt

Directions

Step 1

Preheat the oven to 375°F (190°C). Line a 9x13 inch baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together almond flour, coconut flour, baking powder, xanthan gum, and salt until well combined.

Step 3

In another bowl, lightly beat the eggs. Add in the olive oil, apple cider vinegar, and water. Mix until the liquids are fully combined.

Step 4

Slowly add the wet ingredients to the dry ingredients. Stir with a spatula or mix with a hand mixer until a thick dough forms.

Step 5

Transfer the dough to the prepared baking sheet. Press the dough into a rectangular shape with your fingers, leaving it about 0.5-inch thick.

Step 6

Create dimples in the dough using your fingers. Drizzle a little more olive oil over the top.

Step 7

Sprinkle the fresh rosemary, garlic powder, and flaky sea salt over the surface of the dough.

Step 8

Bake in the preheated oven for 20-25 minutes, or until the focaccia is golden brown.

Step 9

Allow the focaccia to cool slightly on the baking sheet, then transfer it to a wire rack to cool completely.

Step 10

Slice into squares and serve warm or at room temperature.
