  • 4 pieces large eggs
  • 2 tablespoons heavy cream
  • 1 tablespoon unsalted butter
  • 2 slices bacon, diced
  • 1 cup fresh spinach, chopped
  • 1 cup cheddar cheese, shredded
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

In a medium-sized bowl, crack the eggs and add the heavy cream, salt, and black pepper. Whisk together until the mixture is well combined and slightly frothy.

Step 2

Place a non-stick skillet over medium heat and add the diced bacon. Cook until the bacon is crispy, about 5 minutes. Remove the bacon from the skillet and set it aside, leaving the bacon fat in the pan.

Step 3

Reduce the heat to low and add the butter to the skillet. Once the butter has melted, add the spinach and cook, stirring frequently, until the spinach is wilted, about 2 minutes.
