Ingredients

  • 1.5 cups almond flour
  • 0.25 cup erythritol
  • 0.25 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon salt
  • 1.5 cups heavy cream
  • 0.5 cup unsweetened almond milk
  • 0.5 cup erythritol
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon ground nutmeg

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a medium bowl, combine almond flour, 0.25 cup erythritol, melted butter, 1 teaspoon vanilla extract, and salt. Mix until a crumbly dough forms.

Step 3

Press the dough evenly into the bottom and up the sides of a 9-inch tart pan with a removable bottom. Prick the crust with a fork to prevent bubbling.

Step 4

Bake the crust for 10-12 minutes until golden brown. Remove from oven and let cool completely.

Step 5

In a saucepan over medium heat, combine heavy cream, almond milk, and 0.5 cup erythritol. Stir until sweetener is dissolved and the mixture is hot but not boiling.

Step 6

In a bowl, whisk together eggs and 1 teaspoon vanilla extract. Slowly pour the hot cream mixture into the eggs, whisking constantly to avoid cooking the eggs.

Step 7

Pour the custard mixture into the cooled tart crust, and sprinkle with ground nutmeg.

Step 8

Bake the tart for 30-35 minutes, until the custard is set but still slightly jiggly in the center.

Step 9

Remove from the oven and allow to cool at room temperature, then refrigerate for at least 2 hours before serving.

Step 10

Slice and enjoy your Keto Classic Custard Tart.
