  • 0.5 cups Unsweetened almond milk
  • 4 large Egg yolks
  • 0.25 cups Erythritol sweetener
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 300°F (150°C) and bring a kettle of water to boil. This will be used for a water bath later.

Step 2

In a medium saucepan, combine the heavy cream and unsweetened almond milk. Heat over medium heat until the mixture starts to steam, but don't let it boil.

Step 3

In a separate bowl, whisk together the egg yolks and erythritol sweetener until the mixture becomes pale and slightly thickened.

Slowly pour the hot cream mixture into the egg mixture while continuously whisking. This will temper the eggs and prevent them from curdling.
