Ingredients

  • 0.25 cup unsalted butter
  • 0.5 cup water
  • 0.25 teaspoon salt
  • 1 tablespoon granulated erythritol
  • 1 cup almond flour
  • 0.5 teaspoon xanthan gum
  • 3 large eggs
  • 1 cup heavy whipping cream
  • 2 tablespoon powdered erythritol
  • 1 teaspoon vanilla extract

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a medium saucepan, combine butter, water, salt, and granulated erythritol. Heat over medium until the butter is melted and the mixture begins to simmer.

Remove from heat and quickly stir in the almond flour and xanthan gum until well combined and a dough forms.

Allow the dough to cool for 5 minutes. Then, add eggs one at a time, beating vigorously after each addition until the dough is smooth and slightly glossy.

Transfer the dough to a piping bag fitted with a round tip. Pipe small mounds onto the prepared baking sheet, spacing them about 1 inch apart.
