Heat the olive oil in a large pot over medium heat.
Season the chicken thighs with salt and pepper. Add them to the pot and cook until browned on both sides, about 5-7 minutes.
Remove the chicken from the pot and set aside.
In the same pot, add chopped onion and cook until translucent, about 5 minutes.
Stir in the garlic, celery, and carrots, and cook for another 5 minutes until they start to soften.
Pour in the chicken broth, then add the bay leaf and thyme. Bring to a simmer.
Return the chicken thighs to the pot, cover, and let it simmer for 20 minutes.
Remove the chicken, shred it with two forks, and return the shredded chicken to the pot.
Add the spiralized zucchini noodles and simmer for an additional 5 minutes.
Discard the bay leaf and thyme sprigs.
Stir in the fresh parsley and lemon juice before serving.
Taste and adjust seasoning with more salt and pepper if needed.
