  • 1.5 pounds Chicken breast
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 tablespoons Butter
  • 1 unit Medium onion, diced
  • 2 units Garlic cloves, minced
  • 2 units Celery stalks, diced
  • 1 unit Carrot, diced
  • 2 cups Chicken broth
  • 1 cup Heavy cream
  • 0.5 teaspoon Xanthan gum
  • 1 tablespoon Fresh thyme, chopped
  • 1 tablespoon Fresh parsley, chopped
  • 0.5 cup Frozen peas

Directions

Step 1

Start by seasoning the chicken breasts with salt and pepper on both sides.

Step 2

In a large skillet over medium heat, melt 2 tablespoons of butter. Add the seasoned chicken breasts and cook until golden brown on both sides and fully cooked through, approximately 8 minutes per side. Remove the chicken from the skillet and let it rest. Once cooled, dice the chicken into bite-sized pieces.
