  • 8 cups Chicken broth
  • 2 medium Zucchini, spiralized
  • 1 teaspoon Fresh thyme, leaves only
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion, carrots, and celery to the pot; sauté until the vegetables are softened, about 5 minutes.

Step 3

Stir in the minced garlic and cook for an additional minute, until fragrant.

Step 4

Add the boneless, skinless chicken breast to the pot.
