Ingredients

  • 500 g Chicken breast
  • 100 g Almond flour
  • 50 g Parmesan cheese, grated
  • 1 large Egg
  • 0.5 cup Onion, finely chopped
  • 30 g Butter
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 50 ml Coconut oil
  • 2 tbsp Parsley, fresh and chopped

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Finely chop the chicken breast into small pieces or use a food processor to pulse it a few times until roughly chopped.

Step 3

In a skillet over medium heat, melt 10g of butter and sauté the finely chopped onion until translucent, about 5 minutes.

In a large mixing bowl, combine the chopped chicken, sautéed onions, almond flour, Parmesan cheese, egg, garlic powder, salt, and black pepper. Mix well to form a homogeneous mixture.

Shape the mixture into 8 small croquettes (about 60g each), ensuring they are compact to prevent them from breaking apart.
