Ingredients

  • 500 grams chicken breast
  • 3 tablespoons soy sauce (or tamari for gluten-free)
  • 2 teaspoons sesame oil
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 inch ginger
  • 3 stalks celery
  • 1 large bell pepper
  • 100 grams bean sprouts
  • 200 grams mushrooms (button or shiitake)
  • 1 cup chicken broth
  • 1 tablespoon arrowroot powder
  • 2 tablespoons water
  • 3 stalks green onions
  • 1 tablespoon sesame seeds

Directions

Step 1

Slice the chicken breast into thin strips and marinate with 2 tablespoons of soy sauce and 1 teaspoon of sesame oil. Set aside for 10 minutes.

Step 2

Finely mince the garlic cloves and ginger. Thinly slice the celery, bell pepper, and mushrooms. Chop the green onions, keeping the green and white parts separate.

Step 3

Heat 1 tablespoon of olive oil in a large wok or skillet over medium-high heat. Add the marinated chicken and stir-fry until fully cooked and golden brown, about 5-7 minutes. Remove the chicken from the wok and set aside.

Step 4

In the same wok, add the remaining olive oil and add the garlic, ginger, and white parts of the green onions. Stir-fry until fragrant, about 1 minute.
